Cassava-quinoa waffles (gf + V)

Serves 1

  • 2,5 dl Cassava flour

  • 2 dl cooked quinoa

  • 1/2 teaspoon baking soda

  • ¼ teaspoon salt

  • 2 dl water

  • 1 Tablespoon lemon juice

  • 1 Tablespoon olive oil

  • 2 dates (pitted)

  • Cardamom

  • Lemon zest

Blend on high speed until fairly smooth. Mix together with the rest of the ingredients in a bowl. Add more cassava flour or plant milk if needed. The consistency should be thick but not doughy.

Turn on the waffle iron and fry with coconut oil until crispy golden. Enjoy plain or with your favourite topping!
