Cassava-quinoa waffles (gf + V)

Serves 1

  • 2,5 dl Cassava flour

  • 1 dl soaked uncooked quinoa

  • 1/2 teaspoon baking soda

  • ¼ teaspoon salt

  • 2,5 dl plant milk

  • 1 Tablespoon lemon juice

  • 1 Tablespoon melted coconut oil/olive oil

Soak the quinoa. Let it sit for 30-60 minutes, strain and blend with 1 dl water. Blend on high speed until fairly smooth. Mix together with the rest of the ingredients in a bowl. Add more cassava flour or plant milk if needed. The consistency should be thick but not doughy.

Turn on the waffle iron and fry with coconut oil until crispy golden. Enjoy plain or with your favourite topping!
