Nori wraps
Serves 2
Peanut Dressing:
1 clove of garlic (grated or pressed)
A piece of ginger (grated, adjust to taste)
3 tablespoons peanut butter 1 tablespoon soy sauce
1-2 tablespoons water (adjust based on desired consistency)
6 nori seaweed sheets
1 bell pepper (cut into long pieces)
1/2 cucumber (cut into long pieces)
2 avocados (sliced)
1 small sweet potato (baked, cooled, and cut into long pieces)
1-2 heads of baby romaine lettuce
Take a nori sheet and place a leaf of romaine lettuce at one end of the sheet. Fill it with bell pepper, cucumber, avocado, and sweet potato. Be careful not to overfill. Dampen the other end of the nori sheet with a bit of water, then carefully and tightly roll your sushi roll. Dip it in peanut dressing and enjoy!
